    Het wijnhuis André Beaufort is opgericht in 1969 en produceert Champagne van biologische druiven geteeld op zes en een halve hectare wijngaarden die zijn verdeeld tussen Ambonnay en Polisy, in het departement Aube. Naast de biologische teelt past het wijnhuis homeopathie en aromatherapie toe om schimmelziekten te bestrijden en het gebruik van koper en zwavel te minimaliseren.

    De Champagne Brut Reserve Polisy van André Beaufort wordt geproduceerd met Pinot Noir en Chardonnay druiven van biologisch verbouwde wijngaarden in de Côte des Bars, op kleiachtige bodems. De druiven worden handmatig geoogst en de gisting vindt spontaan en op aparte percelen plaats. Na de tweede gisting (volgens de Champenoise methode) rust de wijn 24 maanden op de droesem.

    De wijn heeft een heldere strogele kleur. Het aromatische profiel is elegant en breed met tonen van geel fruit, witte bloemen, wilde kruiden en delicate hints van briochebroodkorst. In de mond is het een elegante en zachte Champagne met een duidelijke minerale ader en een levendig karakter. Hij is fris en romig en heeft een lange en aanhoudende afdronk. Het is de perfecte wijn voor vissoepen en gebakken vis, maar past ook goed bij verse kazen.
