    Israëlische wijnen

    Dit deel van de wereld is beroemd om zijn eeuwenoude wijnerfgoed, maar de laatste jaren hebben Israëlische wijnen een opleving beleefd. Er zijn nu meer dan 300 Israëlische wijnhuizen, waarvan vele familiebedrijven die kleine hoeveelheden topwijnen produceren.

    Belangrijke Israëlische wijngebieden

    De belangrijkste wijngebieden van Israël die de beste Israëlische wijn produceren liggen in de koelere, hoger gelegen gebieden weg van de Middellandse Zeekust. Het Galilea in het noorden staat bekend om zijn heuvelachtig terrein, met hoogtes tot 1000 meter en vulkanische en terra rossa bodems. Een ander hooggelegen noordelijk gebied op de Israëlische wijnkaart is de Golanhoogte, een vulkanisch plateau dat 1.200 meter boven de zeespiegel uitsteekt. Bij Jeruzalem, in het midden van het land, liggen de Judeese heuvels, waar een derde van Israëls wijngaarden ligt. In het uiterste zuiden ten slotte ligt de Negev-woestijn, waar de barre, droge omstandigheden een aantal typisch Israëlische rassen voortbrengen, zoals merlot, chardonnay, shiraz en muscat.

    Israëlische druivenrassen

    Israëlische wijnen worden voornamelijk gemaakt van klassieke Franse rassen als cabernet sauvignon, merlot, sauvignon blanc en chardonnay. Plaatselijke wijnmakers experimenteren ook met mediterrane rassen die beter geschikt zijn voor hete, droge zomers. Hiertoe behoren Grenache, Carignan, Mourvèdre en Viognier. Israëlische wijnen worden gemaakt in een grote verscheidenheid aan stijlen en zijn over het algemeen voedselvriendelijk en passen goed bij typische mediterrane gerechten.
