Domaine Guillon et Fils is in 1980 opgericht door voormalig ingenieur Jean-Michel Guillon en is een wijnhuis in Gevrey Chambertin dat prestigieuze Bourgognewijnen produceert op ongeveer 40 hectare land. Het domein wordt nu beheerd door Jean Michel samen met zijn zoon Alexis, die in 2001 in het bedrijf kwam werken.

Cote de Nuits-Villages Queue de Hareng is een elegante rode wijn gemaakt van Pinot Noir-druiven van een perceel ten noorden van Gevrey-Chambertin, in de gemeente Brochon. De oogst gebeurt met de hand en na de vinificatie rust de wijn in nieuwe eikenhouten vaten.

Het resultaat is een expressieve wijn waarin het gebruik van eikenhout perfect in balans is en een breed en fris aromatisch profiel onthult met tonen van rijpe framboos, zwarte kers en rijpe bessen, gevolgd door kruidige en zoethoutachtige hints. In de mond is hij sappig, vol en zijdezacht. Hij heeft een soepele textuur en goed geïntegreerde tannines. Hij is geconcentreerd met een lange en aanhoudende afdronk die doet denken aan kruidige tonen. Laat hem enkele jaren in de kelder rijpen of serveer hem bij geroosterde gans, gestoofde konijn of kipschnitzels met champignons.
