    Domaine Francois Carillon werd opgericht in 2010, toen Francois het familiebedrijf verliet en de wijngaarden van het domein deelde met zijn broer. Vandaag de dag strekt zijn boerderij zich uit over 16 hectare, waar de belangrijkste teelt Chardonnay is, met kleine hoeveelheden Pinot Noir en Aligoté.

    Cap au Sud is een wijn geproduceerd met Chardonnay druiven uit Zuid-Frankrijk en gemaakt in de Puligny Montrachet kelder. Het idee ontstond in 2021, na drie jaar voorjaarsvorst in Bourgondië die oogstverliezen veroorzaakte. Op zoek naar andere plaatsen om zijn wijnen te produceren, startte Francois Carillon het Cap au Sud project. De druiven worden geleverd door een wijngaard van meer dan 35 jaar oud, gelegen op ongeveer 250 meter boven zeeniveau aan de voet van Montagnac, op klei- en kalkbodems. De gisting vindt plaats in eikenhouten vaten en de afgewerkte wijn rust minstens een jaar in de vaten, voordat hij wordt gebotteld volgens de maancycli, zoals vereist door de principes van de biodynamica.

    Deze verleidelijke witte wijn onthult een intens en fruitig aromatisch profiel met aroma's van steenfruit en appel, hints van honing en minerale tonen. In de mond is hij fris en rond, krachtig en zacht. Hij heeft een goed uitgebalanceerde zuurgraad en een romige textuur. De afdronk is lang en mineraal. Het is een karaktervolle wijn die een uitstekend aperitief is, maar ook goed past bij risotto met zeevruchten of verse kazen.
