    Het aankoopproces en de productkeuze zijn goed, maar de bezorgservice met UPS is ellendig. Ik zal helaas niet meer kopen vanwege de bezorging door UPS die zich nooit aan datum/tijd houdt en een vals excuus geeft dat ze afwezig zijn terwijl ik er was en een vrije dag heb genomen om er te zijn.

    Gelegen in Chablis, heeft Domaine Jean-Paul & Benoît Droin een 14e generatie en bijna 400 jaar familiewijnbouwtraditie. Vandaag de dag wordt het domein, dat zich uitstrekt over ongeveer 13 hectare wijngaarden, beheerd door Benoit, die 14 verschillende wijnen produceert (Petit Chablis, Chablis, 7 Premiers Crus en 5 Grands Crus). Hij kiest voor een lage opbrengst en gebruikt geen nieuw eikenhout.

    De Chardonnay druiven voor de Chablis 1er cru Les Vaillons worden geselecteerd en met de hand geplukt uit verschillende klimaten (Séchets, Epinottes, Beugnons en Châtains) met klei-kalkachtige Kimmeridgische bodems. De vinificatie vindt plaats in eikenhouten vaten voor 25% en de afgewerkte wijn rust 10 maanden in eikenhouten vaten (25%) en houten vaten (75%).

    De wijn heeft een heldere kleur met citroengele tonen en een breed en complex aromatisch profiel met fruitige en bloemige tonen, minerale hints en wat houtnuances. In de mond is hij vlezig en consistent, fruitig en elegant met een goed uitgebalanceerde zuurgraad en een lange, citrusachtige en krachtige afdronk. Voor een jonge Chablis is hij vrij toegankelijk, maar hij heeft nog steeds een uitstekend rijpingspotentieel. Probeer hem bij sint-jakobsschelpen en alle zeevruchten of bij verse kaas.
