A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Gelegen in Bourgondië, in het hart van de wijnstreek Chablis, is Domaine Besson al vier generaties lang een familiedomein. Opgericht in 1902, wordt het bedrijf nu geleid door Alain Besson en zijn twee zonen en beslaat het meer dan 21 hectare wijngaarden waaruit wijnen van zeven benamingen worden geproduceerd. De bedrijfsfilosofie is gericht op minimale ingrepen in de wijngaard en een duurzame en milieuvriendelijke aanpak.

    De Chardonnay druiven komen van een wijngaard van ongeveer 5 hectare, geplant op kleiachtige bodems rijk aan kalksteen. De oogst is handmatig en na een zachte persing van de druiven vindt de gisting plaats bij een gecontroleerde temperatuur. Een klein percentage van de druiven wordt gefermenteerd in vaten. De afgewerkte wijn rijpt vervolgens 18 maanden, deels in staal en deels in kastanjehouten vaten.

    Chablis Montmains 1er Cru heeft een lichtgele kleur met wat lichtgouden reflecties en een breed en geurig aromatisch profiel. De neus onthult tonen van witte bloemen, citrusschillen en natte steen. In de mond is hij vrij vol en lineair met een levendige zuurgraad en een sterk citruskarakter. De afdronk is verfrissend en doet denken aan minerale tonen. Het is de ideale begeleider van schelpdieren.
