    Domaine Ste Michelle produceert alleen mousserende wijnen. Hoewel de wijn wordt geproduceerd in de Columbia Valley in Washington, wordt hij gemaakt volgens de Méthode Champenoise, de klassieke mousserende stijl die ook in de Champagne wordt gebruikt. Daardoor is de mousserende wijn van St. Michelle van een veel hogere kwaliteit dan die van andere producenten van mousserende wijn uit de Nieuwe Wereld.

    De huidige wijnmaker, Paula Eakin, is een liefhebber van mousserende wijn die al meer dan 20 jaar wijn maakt in Washington. Het doel van hun non-vintage brut is om jaar na jaar een consistente mousserende wijn te maken. Dit wordt elk jaar gedaan door monsters van verschillende partijen te proeven en deze vervolgens te mengen met eerdere jaargangen en andere rassen, volgens de cuvée-methode die de beroemde Champagnehuizen gebruiken.

    Columbia Valley ligt op dezelfde breedtegraad als Champagne. Naast vergelijkbare groeiomstandigheden krijgen beide gebieden ook twee uur extra zon tijdens het groeiseizoen, deels door hun geografische ligging.

    Wanneer je het in een fluit schenkt, zie je aanhoudende belletjes en kleine belletjes. De neus heeft delicate aroma's van groene appel en levendige citrus.

    Sparkerende wijnen zijn zeer geschikt voor het combineren van gerechten, omdat ze goed passen bij veel verschillende gerechten. Hartige hapjes, vooral gefrituurd voedsel, zijn heerlijk bij mousserende wijn, evenals eenvoudige en klassieke sushi-rolletjes en sashimi.
