    Kosjere wijn. Nu drinken of tot 10 jaar bewaren. Deze majestueuze Israëlische wijn is een Bordeaux-achtige blend van 75% Cabernet Sauvignon en 25% Merlot, afkomstig van topwijngaarden in de heuvels van Jeruzalem. In de neus zijn er verleidelijke hints van cassis en geplette donkere bessen, terwijl de eerste slok een volle body, stevige tannines en een lange afdronk met subtiele kruidige tonen onthult. Edom, 14 maanden gerijpt in eiken vaten, is een krachtige en intense koosjere rode wijn die goed samengaat met stevige rode vleesgerechten zoals rosbief, biefstuk en zelfs gebarbecued vlees.

    Pagot winery is een bekroond landgoed gelegen in Binyamin net ten noorden van Jeruzalem met prachtige wijngaarden op bergterrassen op 700-900 meter boven de zeespiegel. De omstandigheden zijn hier ideaal voor het produceren van kwaliteitswijnen dankzij de zonnige zomerdagen, gekoeld door briesjes uit de heuvels, waardoor de aromatische complexiteit van de druiven behouden blijft.

    Dit is een echt oud wijnbouwgebied dat naar verluidt het thuisland is van Abraham, die hier duizenden jaren geleden druiven verbouwde en landbouw bedreef. Bewijs van deze lange wijnbouwgeschiedenis is te vinden op de etiketten van Psagot, waarop een munt staat die gevonden is in een oude wijnpers op het landgoed en die dateert uit de Eerste Joods-Romeinse Oorlog van 66-73 CE.
