    Psagot is een van Israëls meest opwindende jonge boutique-wijnhuizen die inspiratie putten uit zowel de oude wijnbouwtradities van het land als de moderne Europese wijnbouwtechnieken en expertise. De wijnmakerij is gevestigd in Binyamin in de heuvels van Jeruzalem, waar volgens de legende Abraham zelf ooit boerde en wijn maakte. Op het landgoed zijn oude wijnpersen gevonden, evenals een grot die nu wordt gebruikt als kelder van het wijnhuis om hun heerlijke rode wijnen te laten rijpen.

    Deze majestueuze Israëlische rode wijn is samengesteld uit Syrah, Petite Sirah en Mourvedre druiven die worden geoogst van Psagot's terrasvormige wijngaarden op de hellingen van Binyamin op 700-900 meter boven de zeespiegel. De omstandigheden zijn hier ideaal voor het maken van kwaliteitswijn, want de druiven krijgen veel zon en een verkoelende bries uit de heuvels van Jeruzalem, waardoor de frisheid en de aroma's behouden blijven.

    Peak wordt gemaakt met druivenrassen uit Zuid-Frankrijk die goed gedijen in de warme omstandigheden hier, wat een krachtige, volle wijn oplevert met veel complexiteit en kracht. In de neus zijn er levendige tonen van cassis, bramen en donkere kersen, terwijl de eerste slok een grote intensiteit van smaak onthult, stevige tannines en een zeer soepele en lange afdronk.
