Een onvergetelijke verjaardag met DAOU & Colomé Het vieren van mijn moeders verjaardag werd nog specialer dankzij twee ongelooflijke wijnen - DAOU Cabernet Sauvignon 2021 en Colomé Auténtico Malbec 2020. De ster van de avond was ongetwijfeld de DAOU Cabernet Sauvignon. Vanaf de eerste slok werden we omarmd door een rijke, fluweelzachte smaak. De diepe aroma's van donker fruit, hints van cacao en perfect gebalanceerd eikenhout zorgden ervoor dat elk glas aanvoelde als een ware verwennerij. Hij was gedurfd en toch elegant, een wijn die moeiteloos warmte en vreugde bracht aan onze bijeenkomst. Toen ik mijn moeder elke slok met een glimlach zag proeven, was het des te gedenkwaardiger. De Colomé Auténtico Malbec leverde ook prachtig, met zijn pure expressie van hooggelegen Malbec. Hij was krachtig, met rijpe bramen, kruiden en een zachte, aanhoudende afdronk - een uitstekende aanvulling op de avond. Deze wijnen versterkten niet alleen onze maaltijd; ze werden een deel van de viering, waardoor elke toast en elk gesprek een hoogtepunt werd. Hartelijk dank aan DAOU en Colomé voor het onvergetelijk maken van deze speciale gelegenheid!

    Drink hem nu of bewaar hem tot 20 jaar. Niet nodig om te decanteren, maar het beste is om hem een half uur voor het serveren te openen.

    Verspreid over 11 hectare in het hart van de Chianti, ten noorden van de stad Siena, wordt het wijnhuis Caparsa sinds 1982 geleid door Paolo Cianferoni, zoon van professor Reginaldo Cianferoni die de wijngaarden in 1965 kocht. Caparsa produceert verschillende stijlen Chianti Classico en andere traditionele Toscaanse wijnen van inheemse rassen. De wijnen rijpen in de zeventiende-eeuwse kelder van het landgoed.

    De Sangiovese druiven, met kleine toevoegingen van Colorino, worden geoogst wanneer ze volledig rijp zijn. Vinificatie vindt plaats in betonnen en grote vaten, en de wijn rijpt vervolgens 14 maanden in kleine Allier, Slavonische, Amerikaanse of Hongaarse eiken vaten, gevolgd door 6 maanden in beton, en nog eens 3 maanden in de fles.

    De Chianti Classico Doccio a Matteo Riserva heeft een intense kleur met robijnrode tinten. Het aromatische profiel wordt gedomineerd door tonen van zwarte kersen, balsamico sporen en tabak, met delicate hints van zoete specerijen (vooral vanille en kaneel) en tenslotte een ijzerhoudende mineraliteit. In de mond is de wijn karaktervol met een levendige frisheid en een duidelijke tannische ruggengraat. De afdronk is lang en elegant. Zijn sapheid maakt hem perfect in combinatie met wildterrines en patés of rood vlees met tomatensaus.
