    Laat de wijn tot 15 jaar rijpen. 2 uur decanteren.

    De diepe robijnrode kleur belooft een klassieke wijn van uitstekende kwaliteit. De neus maakt die belofte waar met intense aroma's van kersen, rijp zwart fruit, kruiden en een lichte aardsheid. Het gehemelte biedt intense smaken van zwart en rood fruit, specerijen, kruiden en wilde bloemen. De wijn is goed gestructureerd, heeft geweldige zuren die perfect samengaan met de rijpe tannines. De aanhoudende afdronk biedt een afsluitend aanbod van rijke chocolade aan het eind.

    Maak deze wijn bij rijke rundvleesgerechten, wild, geroosterd vlees en sterke kaas.

    De aandacht van het wijnhuis voor details bij het maken van zijn wijnen maakt deze wijn zo goed. De handgeoogste druiven worden gedurende vier weken gefermenteerd in roestvrijstalen vaten. Daarna rijpt hij 12 maanden in nieuwe en oude eikenhouten barriques, gevolgd door nog eens 12 maanden in de fles voordat hij wordt vrijgegeven.

    De familie Gaja kocht het landgoed Pieve Santa Restituta in 1994. Het ligt in het zuidwesten van de Brunello di Montalcino appellatie en omvat 40 hectare wijngaarden. De naam komt van de kerk van Santa Restituta die op het landgoed staat.

    De familie heeft nu ook nog eens 25 hectare in het noordoosten van de appellatie verworven en een hypermoderne wijnmakerij en ondergrondse kelder ontwikkeld die de impact op het milieu vermindert - een onderwerp dat de familie na aan het hart ligt.
