Het aankoopproces en de productkeuze zijn goed, maar de bezorgservice met UPS is ellendig. Ik zal helaas niet meer kopen vanwege de bezorging door UPS die zich nooit aan datum/tijd houdt en een vals excuus geeft dat ze afwezig zijn terwijl ik er was en een vrije dag heb genomen om er te zijn.

    Fedellos do Couto is een dynamisch, jong wijnhuis, opgericht door de Portugese wijnmakers Curro Barreno, Jesus Olivares en Luis Taboada, wier familie al generaties lang eigenaar is van het 12e eeuwse landhuis Couto. De naam vertaalt zich ruwweg naar "Brats of Couto", een verwijzing naar hun oneerbiedige en onconventionele benadering van het wijnmaken, waarbij de voorkeur wordt gegeven aan gisting met wilde gisten en minimale menselijke tussenkomst.

    In plaats van hun eigen wijngaarden te kopen, huurt het trio verschillende wijngaarden op steile terrassen op de hellingen van de rivieren Sil en Bibei in Ribeira Sacra. De wijngaarden zijn zo ontoegankelijk dat ze volledig met de hand bewerkt moeten worden, en de drie wijnmakers dringen aan op biologische landbouwpraktijken om zo zuiver mogelijk fruit te produceren.

    Deze bijzondere wijn wordt gemaakt van 100% Merenzao, of Bastardo zoals het in Portugal ook wel genoemd wordt, verbouwd op graniet-, schist- en zandgrond op 550-750 meter hoogte. De zware omstandigheden hier helpen om een levendige en energieke wijn te produceren met gisting in roestvrijstalen tanks en rijping in oude eikenhouten vaten. De geurige neus barst van de gebarsten zwarte peper, zure kersen, granaatappel en hints van wilde kruiden, samen met hints van frambozen en zoete specerijen op de lange afdronk.
