    De schoonzoon van de legendarische Guiseppe Quintarelli, wijnmaker Celestino Gaspari, richtte Zyme op in zijn garage nadat hij meer dan een dozijn wijnhuizen in de regio Veneto had helpen opzetten. Celestino werd geboren in een familie van boeren en begon te werken met vee voordat hij zijn passie voor wijnmaken ontdekte. Hij leerde hoe hij uitzonderlijke Amarone en Valpolicella wijnen moest maken toen hij naast Quintarelli werkte.

    Toen Celestino Zyme oprichtte besloot hij tot een meer experimentele aanpak met weinig bekende inheemse rassen en wijnbouwtechnieken. Oseleta is een zeldzame Venetiaanse druif die lange tijd bijna was uitgestorven, tot slechts 20 hectare aan de oevers van het Gardameer. De versie van Celestino is afkomstig van 30 hectare verspreid over kleine percelen in Valpolicella, Verona en Vicenza.

    De druiven worden gefermenteerd met wilde gisten en de jonge wijn rijpt minstens 36 maanden op vat, gevolgd door een jaar extra rijping op fles. In de neus zijn er elegante hints van rode bessen en kersen, terwijl de eerste slok een heldere zuurgraad, rijpe rode fruitsmaken en een zeer lange afdronk onthult. Een geweldige wijn om te serveren bij vleeswaren, harde kazen of pastagerechten op basis van tomaten.
