Een onvergetelijke verjaardag met DAOU & Colomé Het vieren van mijn moeders verjaardag werd nog specialer dankzij twee ongelooflijke wijnen - DAOU Cabernet Sauvignon 2021 en Colomé Auténtico Malbec 2020. De ster van de avond was ongetwijfeld de DAOU Cabernet Sauvignon. Vanaf de eerste slok werden we omarmd door een rijke, fluweelzachte smaak. De diepe aroma's van donker fruit, hints van cacao en perfect gebalanceerd eikenhout zorgden ervoor dat elk glas aanvoelde als een ware verwennerij. Hij was gedurfd en toch elegant, een wijn die moeiteloos warmte en vreugde bracht aan onze bijeenkomst. Toen ik mijn moeder elke slok met een glimlach zag proeven, was het des te gedenkwaardiger. De Colomé Auténtico Malbec leverde ook prachtig, met zijn pure expressie van hooggelegen Malbec. Hij was krachtig, met rijpe bramen, kruiden en een zachte, aanhoudende afdronk - een uitstekende aanvulling op de avond. Deze wijnen versterkten niet alleen onze maaltijd; ze werden een deel van de viering, waardoor elke toast en elk gesprek een hoogtepunt werd. Hartelijk dank aan DAOU en Colomé voor het onvergetelijk maken van deze speciale gelegenheid!

    Het prestigieuze Champagnehuis Richard Bavion, opgericht in 2017, is een jong bedrijf gevestigd in Epernay en onderdeel van het gelijknamige luxemerk. De prachtige kelders zijn uitgegraven in diepe kalksteengrotten die zich 25 meter onder de grond bevinden en dateren uit de 19e eeuw.

    De exclusieve Champagne Prestige wordt geproduceerd met gelijke delen Pinot Noir en Chardonnay druiven, afkomstig van de beste locaties met toevoeging van 35% reserve wijnen van de beste jaargangen. De wijn rust vervolgens ongeveer 6 jaar in de fles op zijn droesem in de krijtkelders om de aromatische lading volledig tot uiting te laten komen.

    In het glas onthult de Richard Bavion Champagne Prestige een prachtige gouden kleur met heldergele reflecties en een zeer fijn en persistent perlage. Het aromatische profiel is breed en intens met florale en gele appeltonen en hints van citrus en rode bessen. In de mond is hij fris en goed gestructureerd. Hij heeft een zachte en zijdezachte textuur en een delicate en evenwichtige zuurgraad. De afdronk is elegant en lang. Serveer hem gekoeld als elegant aperitief bij een voorgerecht met zeevruchten, of probeer hem bij varkensvlees met een verfijnde appelmoes.
