U.S. President Thomas Jefferson was a huge fan of the Cremant wines of Limoux which were in fact the only sparkling wines he kept in his personal wine cellar. This delicious example from renowned Languedoc winemaker Gerard Bertrand honours Jefferson’s love of both France and its delicious wines.

Sparkling wines have been made in Limoux since 1531 according to the traditional method which is also used for Champagne. This stunning sparkling rosé is predominantly composed of Chardonnay along with smaller proportions of Pinot Noir and Chenin Blanc. As soon as the grapes arrive in the winery they are pressed to ensure the varietal character and freshness is preserved. A base wine is then made which is fermented for a second time in the bottle and left to age on the lees for an extended period in the cellar.

Bright raspberry, strawberry and pink grapefruit dominate the nose while the first sip reveals a rigorous, mouthwatering freshness, light body and elegant mousse with a pure and clean finish. The refined flavour profile makes this a wonderful aperitif before a delicious meal or partner to fresh seafood, pan-fried salmon, or leafy green salads with mozzarella or feta.
