The Pares Balta Absis is one of the wineries ‘microcuvees’, wines they make in very limited quantity and only in the best years. They look to these wines to express their terroir to the utmost, with an elegance and complexity that only the best vineyards could provide. The Absis is made from a blend of Tempranillo, Cabernet Sauvignon, Merlot, and Syrah, in what can only be described as a New World-Old World style wine. A deep purple color with a light ruby rim betray the wines aromatic intensity; notes of raisins, black cherries, mulberries, and smoked cedar are highly concentrated. On the palate, the Absis is full, powerful, and long, with stewed plum, black pepper, and blackcurrant flavors filling the mouth, and ending on a pleasant and elegant finish.

This full-bodied red is best paired with duck or other game birds, pork stew, or strong aged cheeses like Parmigianno Reggiano drizzled with a balsamic glaze.

The estate at Pares Balta dates to the 18th century, when the first vines were planted on the vineyards that now surround the winery. The current owners, the Cusine family, took over in the 1980’s, and have been increasing quality ever since. With the release of their first red wine at the end of the 1980’s, the push for organic and biodynamic grape growing and winemaking began, and since 2011 every wine that Pares Balta produces has been certified organic and biodynamic.
