    La Chablisienne, een coöperatie van 300 producenten met 1.200 hectare voor alle niveaus van Petit-Chablis tot Grand Cru wijngaarden, werd in 1923 opgericht in de stad Chablis op initiatief van Abbé Balitrand. Château Grenouilles is sinds 1999 ook eigendom van La Chablisienne.

    De Chardonnay druiven worden geplukt van de Grand Cru Les Clos, direct aan de rivier de Serein. Hier hebben de wijnstokken een gemiddelde leeftijd van dertig jaar en kunnen ze profiteren van een zuidwestelijke ligging en klei-kalksteenbodems van het Kimmeridgian. Ze worden koud gedecanteerd voordat ze in de vaten gaan voor wat fermentatie. Daarna blijven ze 14 maanden op de droesem liggen.

    De Chablis Grand Cru Les Clos de La Chablisienne onthult een heldere kleur met bleekgouden tinten. Het aromatische profiel is elegant en geurig. In de neus toont hij fruitige tonen van Granny Smith appel, peer en grapefruit, dan bloemige tonen van acacia en wat licht kruidige nuances. In de mond is hij rijk en intens, fruitig en sappig met een duidelijke minerale ader en een aangename romigheid. De afdronk is lang en onthult geroosterde tonen. De wijn past perfect bij geroosterde vis (bijvoorbeeld zeebaars), maar is ook uitzonderlijk bij wit vlees en in het bijzonder bij konijn.
