Als gevolg van het koude klimaat planten Canadese wijnmakers vaak winterharde hybride druivenrassen, zoals Vidal, dat vaak wordt gebruikt voor het maken van ijswijnen. Deze Canadese wijnen van hoge kwaliteit zijn overvloedig zoet en passen goed bij blauwe kazen, desserts op basis van fruit of pittige gerechten. Voor witte wijnen zijn Riesling en Gewurztraminer geschikt voor koelere omstandigheden, terwijl Merlot, Pinot Noir en Cabernet Franc typisch Canadese rode rassen zijn.
