    Bodega Guímaro werd begin jaren 90 opgericht door de familie Rodriguez, nog voor de oprichting van de D.O. Ribeira Sacra. In 2001 kwam Raul Perez als consultant bij het bedrijf en introduceerde nieuwe technieken en een meer natuurlijke benadering van de productie. De naam Guimaro, wat rebel betekent in het Galicische dialect, is een eerbetoon aan de grootvader van Pedro Rodriguez.

    Deze elegante rode wijn uit Ribeira Sacra is een blend van Mencia, Merenzao, Brancellao en Sousón. De druiven zijn afkomstig van wijngaarden met een gemiddelde leeftijd van meer dan 50 jaar, geplant op verschillende bodems en gelegen in de Amandi subzone in Ribeira Sacra. Na de handmatige oogst en spontane gisting in eikenhouten kegelvormige vaten, laat men de most ongeveer 45 dagen weken. De afgewerkte wijn rijpt 8 maanden in foudre en eikenhouten vaten.

    Camino Real, waarvan de naam is geïnspireerd op de weg die ooit door de royals werd gebruikt om van Doado naar Castro Candelas te gaan, is een rode wijn met een fris en complex aromatisch profiel. In de neus onthult hij geurige bloemen- en fruittonen en hints van wilde kruiden. In de mond is hij fris en fruitig, sappig en evenwichtig. Hij heeft een evenwichtige zuurgraad en zachte tannines. De afdronk is lang en verfrissend. Hij is heerlijk bij ratatouille, Parmezaanse kip en pasta amatriciana.
