    Domaine Guy & Yvan Dufouleur is een Bourgondisch familiebedrijf dat meer dan 400 jaar geleden werd opgericht in Nuits-Saint-Georges en tegenwoordig wordt gerund door Yvan Dufouleur. De wijngaarden van het domein beslaan ongeveer 28 hectare.

    De Pinot Noir druiven worden handmatig geoogst van een wijngaard met een gemiddelde leeftijd van 65 jaar in de Clos du Chapitre Monopole, ten noorden van de Cote de Nuits. Hier zijn de wijnstokken, gelegen op 320 meter hoogte met oostelijke ligging, geworteld in klei-kalksteen bodems, diep en licht marmeren. Na de koude maceratie voor de gisting en de daaropvolgende vinificatie rust de afgewerkte wijn 12 maanden in eikenhouten vaten, voordat hij wordt gemengd en nog eens 3 maanden in roestvrij staal.

    Fixin Premier Cru Clos du Chapitre Monopole heeft een heldere en diepe kleur met donkere robijnrode tinten en een complex en breed aromatisch profiel. In de neus onthult hij een aangename fruitige intensiteit met tonen van zwarte bes, bosbes en braam en vervolgens wilde en aardse hints, nuances van truffel en zoethout. In de mond is hij krachtig en karaktervol, rond en elegant. Hij heeft stevige maar fijne en goed geïntegreerde tannines en een goede zuurgraad. De afdronk is lang en zacht eiken. Combineer deze wijn met wildstoofpot of goulash, polenta met eekhoorntjesbrood en rijpe kazen.
