    Het aankoopproces en de productkeuze zijn goed, maar de bezorgservice met UPS is ellendig. Ik zal helaas niet meer kopen vanwege de bezorging door UPS die zich nooit aan datum/tijd houdt en een vals excuus geeft dat ze afwezig zijn terwijl ik er was en een vrije dag heb genomen om er te zijn.

    Krachtig en gespierd van stijl is deze grote Cabernet het handwerk van wijnmaker Austin Hope, wiens familie in de jaren zeventig naar Paso Robles verhuisde. Aanvankelijk boeren en druiventelers, begon de familie in 1995 hun eigen wijnen te maken en hebben ze een indrukwekkende reputatie opgebouwd voor serieuze rode wijnen. Vorige jaargangen stonden in Wine Enthusiast's Top 10 van wijnen uit de hele wereld, wat bewijst dat deze zeer speciale fles ver boven zijn prijskaartje uitsteekt.

    De familie Hope betrekt de druiven voor deze botteling van percelen van topkwaliteit in Paso Robles. Hier zorgen de zacht glooiende heuvels, warme zonnige dagen en verkoelende briesjes van de nabijgelegen Stille Oceaan ervoor dat de Cabernet-druiven een optimale rijpheid kunnen bereiken zonder aan evenwicht in te boeten. De wijngaarden zijn hier aangeplant op een hoogte van 1000 voet op oude zeebodems die rijk zijn aan fossielen en helpen de frisheid en elegantie van de wijn te bewaren.

    Austin vinifieert en rijpt de afzonderlijke partijen gedurende 11 maanden apart in Frans eikenhout en mengt de wijn vervolgens en laat de afgewerkte wijn nog eens 3 maanden rijpen om de wijn te harmoniseren en extra complexiteit toe te voegen. Zodra je een glas inschenkt vallen de verleidelijke aroma's van cassis, bramen en donkere kersen op, die worden aangevuld met hints van leer, houtrook en tabak. De eerste slok onthult een gulle, volle body en soepele, maar krachtige tannines met een zeer lange afdronk.
