    Giorgi Solomnishvili's familiewijnhuis ligt in de belangrijkste wijnregio van Georgië, Kakheti, en produceert Georgische wijnen met behulp van Qvevri-technologie. De belangrijkste gebruikte druif is Saperavi, die vervolgens wordt gerijpt in eikenhouten vaten. Voor Giorgi is wijn een en al filosofie. Hij legt zijn ziel in elke geproduceerde fles. Hij kent zijn land, bodem, waterpeil, wijnstokken en klimaat. Als je de Saperavi druivenwijnen van Giorgi Solomnishvili proeft, ontdek je de beste klassieke rode wijnen van Georgië, een uniek bouquet van smaken uit de Alazani vallei en de interessante effecten van de Qvevri methode en het gebruik van eikenhout.

    Saperavi Sio komt van 25 jaar oude wijnstokken in het Kakheti wijngebied. De druiven worden handmatig geoogst, daarna geperst en samen met de schillen en steeltjes in de traditionele Qvevri (terracotta amfoor) gedaan; de amfoor wordt dan verzegeld en de most laat men gisten. Later rijpt de wijn 12 maanden in Franse eikenhouten vaten.

    Door deze behandelingen ontwikkelt de wijn zeer rijke aroma's: het rode fruit dat typisch is voor de Saperavi druif, maar ook tonen van gedroogde pruimen, kaneel, peper, zoethout en leer. In de mond is de wijn vol, met rijke tannines en een frisse en krachtige afdronk. Dit is echt een interessante en diepgaande wijn die perfect past bij gegrild rood vlees of gerijpte kazen.
