    Isabelle en Denis Pommier verhuisden in 1990 naar de Bourgogne om wijn te maken van 2 hectare wijngaarden die ze van de familie erfden. De eerste oogst dateert uit 1994 en met de wijn uit dat wijnjaar behaalden ze meteen veel succes op de wijncompetitie van Chablis. Vandaag de dag heeft het in Poinchy gevestigde bedrijf meer dan 20 hectare wijngaarden die sinds 2014 biologisch gecertificeerd zijn.

    Chablis Premier Cru Fourchaume is een subtiele en elegante wijn gemaakt van Chardonnay druiven die handmatig zijn geselecteerd en geoogst van wijnstokken tussen de 25 en 50 jaar oud, gelegen in het dorp La Chapelle Vaupelteigne en geplant op kleiachtige kalksteenbodems. De gisting vindt voor tweederde van de druiven plaats in staal en voor een derde in eikenhouten vaten. De afgewerkte wijn rijpt vervolgens 18 maanden voordat hij op de markt wordt gebracht.

    In het glas onthult de wijn een briljante kleur met strogele tinten en een fris en breed aromatisch profiel met aangename bloemen-, citrus- en witte fruittonen. In de mond is hij mineraal en sappig, met een duidelijke zuurgraad en levendigheid. De afdronk is lang en aangenaam verfrissend, met minerale en jodiumachtige hints. Uitstekend bij oesters, maar probeer hem ook eens bij vis en zeevruchten.
