    Harimann is de eerste wijn van de Pasetti familie en een referentie-expressie van de Montepulciano d'Abruzzo druif. De druiven worden meestal in november geoogst, wanneer ze optimaal rijp zijn, van wijngaarden aan de voet van het machtige Gran Sasso-massief in de Apennijnen.

    De wijnstokken zijn aangeplant op 550 meter hoogte en profiteren van de sterke bergwinden en koele nachten die bijdragen aan het behoud van frisheid en een complex smaakprofiel. In de wijnmakerij wordt de most gevinifieerd in roestvrijstalen tanks waar hij 12 maanden wordt opgeslagen, daarna tot 36 maanden in nieuwe eikenhouten vaten. De wijn wordt uiteindelijk vrijgegeven na nog eens 18 maanden flesrijping.

    Dit uitgebreide rijpingsproces helpt om een rijke, krachtige wijn te produceren met een zeer lange afdronk en lagen van smaken die evolueren en veranderen in het glas. De neus opent met tonen van zwarte kersen, leer en karamel die in de mond verdiepen en plaats maken voor onstuimige kersenlikeur, pruimen en zwarte bessen, vergezeld van tonen van koffie, cacao, zoethout en rokerige tabak. Deze rijpe wijn is ideaal om nu van te genieten bij stevige rode vleesgerechten of kan nog zo'n 10 jaar bewaard worden.
