    La Borderie is een jong Champagnehuis, opgericht door Simon en Marie Normand, dat gebruik maakt van 11 hectare familiewijngaarden in de Cote de Bars. Het bedrijf heeft wijnstokken met een gemiddelde leeftijd van 50 jaar, die profiteren van klei-kalksteen bodems. De lage opbrengsten en de zorgvuldige verzorging in de wijngaard en in de kelder garanderen de productie van elegante Champagnes met een uitstekende concentratie.

    De Pinot Noir druiven komen van een perceel in Merrey sur Arce, met wijnstokken van ongeveer 50 jaar die een lage opbrengst geven en op het zuidwesten staan. De vinificatie vindt plaats in roestvrij staal en de wijn rijpt 24 maanden in de kelder.

    De Douce Folie rosé champagne wordt alleen in de beste jaren geproduceerd en heeft een geurig en fruitig aromatisch profiel met tonen van framboos en kers, aalbes en wilde bessen, gevolgd door minerale en bloemige geuren. In de mond is hij rond en hartig, geconcentreerd en diep. Hij heeft een romige textuur en een aanhoudende en fijne mousse. De afdronk is lang en mineraal. Het is de ideale wijn om te serveren bij een vleesplankje, bij carpaccio van rundvlees of bij gesauteerde reuzengarnalen.
