    Gesticht in 2013 in Bar-sur-Seine door Simon en Marie Normand, bezit het jonge Champagnehuis La Borderie ongeveer 11 hectare wijnstokken van ongeveer 50 jaar oud, gelegen in de Côte des Bar op klei-kalksteen bodems. Het huis werkt met beperkte opbrengsten en vinifieert de druiven afzonderlijk per wijngaard van herkomst om wijnen van uitstekende kwaliteit en met een groot karakter te produceren.

    De Pinot Noir druiven komen van één perceel in Neuville sur Seine, Côte des Bar, op het noorden, geplant in 1980. De vinificatie vindt voornamelijk plaats in kuipen en slechts een klein deel in vaten, om de zuiverste expressie van het fruit te garanderen. De wijn rust 30 maanden in de kelder op de droesem.

    Deze Blanc de Noirs Extra Brut heeft een briljante gouden strogele kleur. Het aromaprofiel is breed en complex met minerale en kalkstenen tonen, fruitige hints van appel en zwarte bes, wilde aardbei en roze grapefruit en tot slot nuances van zoete specerijen, amandel en kamperfoelie. In de mond is hij fris en geconcentreerd, zacht en fruitig. Hij heeft een romige textuur en een aangename frisheid. De afdronk is lang en evenwichtig. Probeer hem eens bij zalmlasagne, gegratineerde oesters, pasta met krabsaus of geroosterde tarbot.

Het aromatische profiel is breed en complex met minerale en kalkstenen toetsen, fruitige hints van appel en zwarte bes, wilde aardbei en roze pompelmoes en tot slot nuances van zoete specerijen, amandel en kamperfoelie.
