    Het landgoed Casa Castillo is opgericht in 1991 en beslaat 450 hectare op de hellingen van de Sierra del Molar, waarvan 170 hectare is beplant met wijngaarden en de rest met amandel- en olijfbomen. Het bedrijf is eigendom van de familie Vicente en wordt tegenwoordig geleid door José María Vicente. De meest voorkomende variëteit in de wijngaarden van het landgoed is Monastrell, gevolgd door Garnacha en Syrah.

    Casa Castillo's El Molar wijn wordt uitsluitend geproduceerd met Garnacha druiven, geoogst van wijngaarden gelegen op de hellingen van de Sierra del Molar beplant met wijnstokken tussen de 13 en 16 jaar oud. De bodem is hier zanderig met de aanwezigheid van grind aan de oppervlakte en het klimaat is mediterraan. De druiven worden handmatig geoogst en na de gisting rijpt de afgewerkte wijn 14 maanden in een mix van vaten van 500 en 5000 liter.

    De wijn heeft een heldere kleur met kersentonen. De neus onthult een fris en aangenaam aromatisch profiel met tonen van rood fruit en bramen, kruidige en balsamico hints. In de mond is hij fris en harmonieus met fijne tannines en een goed gebalanceerde zuurgraad. De afdronk is lang en aangenaam en doet denken aan fruitige geuren. Hij past perfect bij aubergine Parmigiana.
