Voorheen eigendom van Raffaele Rossetti, die een 16e eeuwse boerderij kocht, begon de productie op het wijnhuis in 1974 en de eerste Chianti werd uitgebracht in 1975. Sinds het nederige begin is het wijnhuis uitgegroeid tot een Chardonnay IGT, Solare IGT, Chianti Classico Riserva DOCG, en een rode 50&50, een mengsel van Merlot en Sangiovese. Het idee voor de 50&50 blend werd geïnspireerd door een uitzonderlijke oogst in 1988 en bevat een Avignonesi di Montepulciano-geproduceerde Merlot, die het beste van twee werelden mengt. De productie van Capannelle gaat verder dan alleen wijn en levert jaarlijks 800 liter extra vergine olijfolie op.

Interesting Facts

De wijnmakerij van Capannelle richt zich op de toepassing van een hoogtechnologische benadering van de wijnproductie en op zorgvuldige aandacht voor het rijpingsklimaat. Er worden roestvrijstalen gistingsvaten gebruikt en ook alle leidingen en kleppen zijn van roestvrij staal, om een hygiënische en gesloten omgeving te garanderen en om te voorkomen dat het parfum van de wijn verandert. Er wordt een microklimaat gecreëerd doordat de barrique-kelder zich 3 meter onder de grond bevindt, met klimaatbeheersing om de juiste temperatuur en vochtigheid te garanderen. De wijn rijpt in houten vaten, perfect voor de Chardonnay en Solare wijnen, en de barriques voor witte wijn worden elk jaar vervangen, terwijl de barriques voor rode wijn om de twee jaar worden vervangen.
