Een onvergetelijke verjaardag met DAOU & Colomé Het vieren van mijn moeders verjaardag werd nog specialer dankzij twee ongelooflijke wijnen - DAOU Cabernet Sauvignon 2021 en Colomé Auténtico Malbec 2020. De ster van de avond was ongetwijfeld de DAOU Cabernet Sauvignon. Vanaf de eerste slok werden we omarmd door een rijke, fluweelzachte smaak. De diepe aroma's van donker fruit, hints van cacao en perfect gebalanceerd eikenhout zorgden ervoor dat elk glas aanvoelde als een ware verwennerij. Hij was gedurfd en toch elegant, een wijn die moeiteloos warmte en vreugde bracht aan onze bijeenkomst. Toen ik mijn moeder elke slok met een glimlach zag proeven, was het des te gedenkwaardiger. De Colomé Auténtico Malbec leverde ook prachtig, met zijn pure expressie van hooggelegen Malbec. Hij was krachtig, met rijpe bramen, kruiden en een zachte, aanhoudende afdronk - een uitstekende aanvulling op de avond. Deze wijnen versterkten niet alleen onze maaltijd; ze werden een deel van de viering, waardoor elke toast en elk gesprek een hoogtepunt werd. Hartelijk dank aan DAOU en Colomé voor het onvergetelijk maken van deze speciale gelegenheid!

    A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Palliser Estate bezit ongeveer 85 hectare eersteklas wijngaarden in Martinborough, waar ze enkele van de beste Sauvignon Blancs van de regio maken. Hoewel de eerste druiven pas in 1989 werden geoogst, heeft chef-wijnmaker Allan Johnson meer dan 80 gouden medailles voor zijn wijnen gewonnen sinds hij in 1991 bij Palliser kwam werken. Tegenwoordig is het landgoed bezig alle wijngaarden om te schakelen naar biologisch beheer en baanbrekende duurzame praktijken in te voeren om ervoor te zorgen dat Palliser nog generaties lang bekroonde wijnen blijft maken.

    Om het pure raskarakter van Martinborough Sauvignon Blanc tot uitdrukking te brengen, vergist Allan Johnson de wijn in roestvrijstalen tanks en rijpt hij vervolgens zes maanden op de droesem. Hierdoor ontstaat een levendige, fruitige Sauvignon Blanc die in de neus limoenschil, passievrucht en witte perzik uitstraalt. Deze intense aroma's werken door in de mond, samen met hints van gedroogde kruiden en een vuursteenachtig mineraal karakter.

    Vanaf de eerste slok is er ook een tintelende zuurgraad die helpt je dorst te lessen, zelfs op de heetste dagen, en de lagen geconcentreerde smaken blijven lang op de tong hangen. De heldere frisheid maakt deze Sauvignon Blanc uitstekend geschikt voor gerechten die soms moeilijk te combineren zijn met wijn, zoals Thaise rode curry, ceviche of Vietnamese pho.
