    Bibi Graetz begon in 2000 met de productie van wijn in Toscane. Hij haalde de druiven uit een wijngaard rond het middeleeuwse kasteel van Vincigliata, die in de jaren 60 door zijn familie was gekocht. Vandaag de dag wordt Bibi, een persoon met een grote creativiteit en autodidact in wijn, beschouwd als een van de meest eclectische en interessante producenten in Toscane, die door de jaren heen uitstekende recensies en prijzen heeft gekregen. Zijn bedrijf beslaat ongeveer 50 hectare wijngaarden, waar voornamelijk inheemse wijnstokken uit de regio worden verbouwd.

    Testamatta is een 100% Sangiovese wijn. De druiven zijn afkomstig van 5 wijngaarden in de gemeente Fiesole, met een gemiddelde leeftijd van 80 jaar, op klei- en mergelrijke grond. Na vinificatie in barriques met inheemse gisten rijpt de afgewerkte wijn 2 jaar in Franse barriques (waarvan 10% nieuwe) en daarna 6 maanden in de fles.

    De wijn heeft een heldere robijnrode kleur. Het aromatische profiel is breed en boeiend met tonen van rode en zwarte kersen, enkele hints van zoete specerijen en nuances die doen denken aan leer en tabak. In de mond is hij karaktervol, complex en vol. Hij heeft stevige tannines en een duidelijke zuurgraad. De afdronk is lang en aromatisch. Hij is klaar om nu te drinken, maar kan nog enkele jaren in de kelder blijven. Hij past perfect bij gegrild of geroosterd rood vlees.
